Make your own taco seasoning!

I recently found a recipe for making your own taco seasoning and wanted to try it. And, as often is the case, I tweaked it a bit.

I have no problem using the little taco packet and it's not as if it's that expensive! Aldi's brand is around $.30. Soo... unless you already have these spices in your home, I'm not sure it'll necessarily save you money, either. Depends on how often you eat tacos! :-)

But, yes, making it yourself does knock out any chemicals or unnecessary ingredients that the packets may contain.

Ok... get yourself a little bowl and these spices: chili powder, garlic powder, onion powder, crushed red pepper flakes, dried oregano, paprika, ground cumin, sea salt (I used kosher), black pepper, dried minced onion, and cornstarch.


Into your bowl, spoon 1 Tablespoon chili powder:


Add 1/4 teaspoon EACH of garlic powder, onion powder, crushed red pepper flakes and dried oregano:


Now add 1/2 teaspoon of paprika and 1 1/2 teaspoons of ground cumin (cumin, I think, is what "makes" the taco flavor we're all familiar with... so, don't try to omit or substitute!):


Add 1 teaspoon EACH of sea salt and ground pepper:


Mix all ingredients together. This ends the Allrecipes version.


Every packet of taco seasoning I've ever used has dried minced onions in it. So, I decided to add some... if desired, add 2 teaspoons dried minced onions:


Ahh, now we're done... or so I thought! :-)


I realized that I didn't just want to season my meat, but I wanted the thick saucy/glaze on my meat that usually results using a packet. So, I added 1 Tablespoon of cornstarch to my spice mixture.

After I browned my meat, I sprinkled about 2 Tablespoons of my spice mixture onto the meat (spice mixture yields about 3 Tablespoons with my added ingredients). I then added 3/4 cup of water and allowed the meat to come to a simmer. Simmer for 10-15 minutes... done!

And, YUMMY! The mix was really tasty and simple to make! I do make "taco" seasoned dishes often, so this recipe will certainly be sticking around!

And the Ecostore USA winner is....

Because only 10 comments were left for the Ecostore USA giveaway, I thought I'd hold the drawing the old fashioned way. It seemed more contest-like than using random.org! :-)

I wrote each name on a piece of paper and let my daughter draw the name.

If it makes anyone feel better, after the first paper was pulled out of the basket, she kept saying, "Contest, mama! Contest!" and proceeded to pull out ALL of your names! ;-) So, you were all winners, I guess!

Muffin Tin Meals

Here's to another fun, creative idea by SOMEONE ELSE! :-)

I've been blog hopping a lot lately, and came across several "Muffin Tin Monday" posts. Michelle seems to be the main Muffin Queen. ;-) But, you can certainly find more than enough ideas if you use google! Sandy has some fun ones over on her blog, too!

What a fun, simple way to make a meal a bit more exciting for your little (and big!) ones!

I didn't have a 6-muffin pan (as you see most Muffin Tin meals are placed in), and I thought that only half-filling a 12-muffin pan wouldn't have the same desired effect.

So, I just used cupcake liners for my first try...

(ham, a cheese stick cut into pieces, goldfish, and mandarin oranges)


(grapes, egg salad with crackers and bread "sticks" for dipping)

My son couldn't care less what vehicle his food is in...he just wants to eat. My daughter, however, thought it was fun and ate a bit more than usual.

The ideas for a Muffin Tin Meal are endless. Sure, you can just plop what you were normally going to serve into a muffin tin...or, think in FUN terms for your little audience!

I've seen a numbers theme, with a cored apple slice for the "O", 1 licorice stick, 4 grapes, and so on.

I've seen certain colors as a theme. All red foods: tomato, strawberries, jello, etc...

Breakfast foods, with waffle or french toast sticks with syrups for dipping.

I bet you can think of a few fun things!!

If you really have picky kids, check out this fun food discovery by Heidi. Who knew bread and butter could be so exciting?! Now, would spinach benefit from sprinkles...? ;-) Might just be worth a try!
